INGREDIENTS:
* 2 lbs boneless Beef shank cut into desired sizes
* Optional 1/2 lbs beef tripe
* Optional 1/2 pound beef tendon
* 1/4 pound smoked fish
* 1/4 lbs fresh croaker fish
* 1/4 pound mackerel cut into steak
* 2 large blue crabs cleaned and halved
* 1/6 pound de-veined prawns/shrimp
* 4 onions (1 chopped for cooking meat, 1 blended with other aromatics listed below for stew base, 1 thinly sliced for perfuming oil for stew base, 1 thinly sliced for garnish)
* 1 tbsp each ginger and garlic paste for cooking meat
* 1 tbsp salt or to taste
* 1 tsp crushed black pepper
* 1 tbsp all purpose seasoning or 1 chicken or beef bouillon cube
* 1 tbsp scotch bonnet chili for cooking meat
* 3 green peppers or 1/4 cup Pettie bell chili blended with 1 onion, 1 thumb size ginger, 5 cloves garlic, 1/4 tsp aniseed, for stew base
* 1 cup palm oil
* 2 pounds fresh okra chopped
* 6 cups fresh or frozen chopped spinach
* 2 Roma tomatoes
* 1 red bell pepper
* 1 small piece of fermented fish
* Pinch of baking soda
