My favorite way to make AND eat sweet and sour chicken

Chicken Batter:
1 1/2 cups water 344 grams
1 1/3 cups ap flour 200 grams
1 tbsp baking powder 16 grams
1/3 cup corn starch 50 grams
3 tbsp avocado oil (forgot to put this in the video but this is correct)
Salt 1 1/4 tsp
1 whole egg

Sweet and sour sauce
1/3 cup sugar
5 tbsp white vinegar
2 tbsp ketchup
1 tbsp soy sauce
1/3 cup pineapple juice
2-3 tsp cornstarch mixed with 2 tbsp water
Slice of ginger
Orange peel
