STEAK

2-2.5 lb cowboy steak (2.5-3 inches thick)
Olive oil
Salt
Black pepper

1. Leave steak out at room temp for 1-2 hours. There was a piece of fat at the edge of the steak that I cut off.

2. Then season with olive oil and salt.

3. Bake on a wired rack at 225F for 55-70 minutes (or until internal temp hits 130-135F)

4. Bring a cast iron over HIGH heat and using the piece of fat you cut off your steak at the beginning, slather it all over your cast iron. If you didn’t cut off a piece of fat, then use olive oil.

5. Once cast iron is scorching hot, sear each side of your steak for 2 mins.

6. Remove steak and allow to rest.

7. Then slice and enjoy.
