Описание

One of my favourite pairings is coffee and smoked meat so I whipped out the ST ALi Italo Disco blend this weekend and made coffee smoked short ribs. Check out the recipe below.

Ingredients

- 5 tbsp fresh ground ST. ALi Italo Disco coffee
- 2 tbsp cocoa powder
- 1 tbsp brown sugar
- 3 tbsp sea salt
- 1 tbsp ground black pepper
- 1 pack beef short ribs
- 100ml cold black ST. ALi Italo Disco coffee

Method

1. Pour all the dry ingredients into a bowl and mix.
2. Preheat your smoker to 135c (275f).
3. Remove your ribs from the packet and pat dry.
4. Check you don't have any sharp edges on the ribs and trim to smooth them out if need to (the sharp corners will burn, you want to make the ribs as aerodynamic as you can to avoid this).
5. Pour the cold black ST. ALi Italo Disco coffee over the ribs and rub all over, this will act as a binder for the seasoning to stick to.
6. Season well with the ST. ALi Italo Disco coffee rub. Pat on, making sure it sticks).
7. Put the ribs in the smoker.
8. After 3 hours, start to check the bark and temperature, you should have a nice bark formed by this stage.
9. Once the ribs reach 95c (204f) remove them and let them rest for at least an hour.
10. Enjoy!
