Live Fire Pork Belly Accordion

Creating a pork belly shape might look cool but it also has some real benefits. By increasing the surface area, seasoning and crispiness is significantly improved. Pork belly is also extremely fatty and this allows for way better rendering. If you try this at home, I suggest partially freezing the pork belly to make slicing easier.
